SHORT DESCRIPTION

An easy eggplant dish. Mix and match with different sauces and toppings. Below is my favourite method.

DESCRIPTION

  1. Preheat oven to 180c.
  2. For glaze, mix all ingredients together, adjust to liking.
  3. Slice eggplants in half lengthwise and score inner flesh with a knife (don't cut skin).
  4. Brush the sliced sides with oil and place oiled side down on a lined oven tray.
  5. Bake for 20mins, or until inside is soft and can easily be pierced with a fork.
  6. Flip eggplants over so sliced sides are facing up. Brush generously with the glaze.
  7. Place tray on highest oven shelf and broil eggplants until caramelised or charred to liking!
  8. Remove eggplants from oven, sprinkle with topping and serve.

INGREDIENTS

Eggplant :
6 medium eggplants 

Organic Olive Oil Extra Virgin for brushing

Glaze:
2 tsp Organic White Miso Paste
4 tsp Organic Tamari Soy Sauce
1 tsp Sesame Oil
2 tsp Organic Rice Vinegar
2 tsp mirin or 1 tsp Organic Coconut Flower Nectar (optional for sweetness)
1 tsp fresh grated ginger

Topping:
1 tbsp Organic Hulled Sesame Seeds (lightly toasted)
1 tsp Organic Chilli Flakes
1 bunch chopped chives
