Banana Blossom Tofu Curry

Method
- Cook the wild rice per packet instructions (approximately 40 minutes)
- In a blender, blitz the silken tofu until it is completely smoothe
- Heat the oil in a frying pan, and add the broccoli, cauliflower and zucchini. Cook until they start to soften and caramelise
- Add the garlic and banana blossom, stir. Then add the miso paste, soy sauce and season with salt and pepper. Keep cooking until the garlic is fragrant and the vegetables are evenly seasoned.
- Add the silken tofu and stir to coat the vegetables. Remove from the heat and season if necessary
- In a separate pan, add 1 tsp extra virgin olive oil, and add the firm tofu to the pan. Season with salt and cook until golden and crispy.
- Serve the curry on a bed of the wild rice, and top with the crispy tofu.
