DESCRIPTION

  1. Preheat the oven to 180 degrees and line a baking tray with foil.
  2. Season the celeriac steaks, generously with extra virgin olive oil and salt. Massage the ingredients on the steaks. Bake for 40 minutes, flipping half way, until golden and caramelised.
  3. Meanwhile, heat 2 tbsp extra virgin olive oil in a saucepan with the garlic and chilli. Simmer on low for 10-15 minutes until the garlic is golden and caramelised.
  4. In a food processor, combine the chickpeas, banana blossom, tahini and garlic chilli infused oil until smooth. Season generously with salt, pepper and lemon juice.
  5. In a non-stick pan, add some oil and stir fry the cauliflower in adobo sauce until soft.
  6. To plate, add a spoonful of the hummus, top with the celeriac steaks, spicy cauliflower and some kraut for a tang!

3 garlic cloves, smashed
1 red chilli, thinly sliced
1 can Organic Chickpeas
1 can Organic Banana Blossom
20g Organic Unhulled Tahini
1 lemon, juice
250g cauliflower florets
1 tbsp adobo sauce
