Moroccan Chickpeas & Hummus Sourdough

A flavoursome, protein-packed snack! Toasted sourdough bread with a smearing of homemade hummus, and topped with delightfully spiced chickpeas.
Method
- Drain chickpeas and rinse thoroughly. Set aside.
- Put oil in a frying pan with diced onion, garlic and chilli flakes, and cook over low-medium heat. Once the onions turn translucent, add chickpeas, maple and spices. Stir thoroughly until chickpeas are coated in spices.
- Cook for a further 5 minutes then add a handful of spinach and continue to cook until wilted down. Remove from heat.
- Toast Sour Dough and add a generous layer of hummus. Pile Chickpeas and spinach on top and serve with cherry tomatoes and lemon.
