GROWING & PROCESSING
Honest to Goodness Organic Coconut Syrup is a delicious syrup derived from the nectar of organic coconut palm blossoms. Similar to maple, the flower is tapped to release the sap.
It is produced by taking 4L of the coconut sap and boiling it to produce 1L of syrup. The sap is heated to 75-80 degrees to prevent fermentation, and to evaporate the water content in the coconut sap. Coconut syrup contains 72-75% sugar and tastes caramel/sweet/salty.
The colour, sweetness and flavour of the coconut syrup can vary slightly depending on the coconut species used, season and location of harvest and the way the sap is reduced during production. An example of this is when there is a slight decrease in the percentage of dissolved solids present in the sap over the rainy season.
