Method
- Mix the yeast with half a cup of the warm water, then cover and let stand for 5-10 minutes, until the yeast is frothy.
- Mix-in the rest of the water (making sure it is still the right temperature) and add the salt, cumin or caraway seeds, vinegar and organic rye flour. When the dough is thoroughly mixed, cover it and set it aside in a warm place for 15-30 minutes, until it has risen to almost double its original size. Then turn the dough out onto a bench and kneed in as much organic plain flour as you need until the dough is a nice smooth consistency. Cut the dough into 2 pieces, shape into loaves, and place in loaf tins or on a baking tray.
- Cover and rise in a warm place for about 30 minutes. Bake in the oven at 175 degrees celsius for approximately 50 minutes.
- Carefully brush the loaves with water a few times during baking. Enjoy!
