SHORT DESCRIPTION

These zingy zuchini pickles are a bright and tasty addition to any salad, grazing spread or sandwich!

DESCRIPTION

  1. Salt zucchinis and onions and leave to drain for an hour. Rinse with water, pressing out excess water and place into a jar. 
  2. Meanwhile combine vinegar, water, sugar, turmeric and mustard seeds in saucepan over medium heat, bringing to boil. Simmer for 3 minutes and then set aside to cool.  
  3. Pour cooled pickling mixture into jar, ensuring zucchini and onions are immersed and seal tightly with a lid. Refrigerate for at least 3 hours before serving.

2 medium zucchinis, thinly sliced lengthwise 
½ yellow onion, thinly sliced 
Celtic Sea Salt
¾ cup Organic Apple Cider Vinegar with Ginger, Turmeric & Chilli
1 cup water 
¼ cup Organic Raw Sugar
2 tsp mustard seeds 
½ tsp Organic Turmeric Powder
